Pavilion is an intimate omakase by Chef-Owner Nick Bognar, a James Beard Semi-Finalist who fuses 18 years of sushi craft with his Thai heritage. Set in the backyard of sister restaurant Sado, the tasting is a carefully paced, roughly three-hour journey of 18 courses that balances precision technique with bold Southeast Asian notes. Seating is limited — choose between the six-seat sushi bar for a face-to-face service or the dining room for a table experience.
